A healthy take on the Canadian classic dish Poutine!
Recipe type: Entree
Cuisine: Canadian
Serves: 1 - 2
  • 2 medium sweet potatoes
  • 2 tbsp vegetable oil (any, I used olive oil)
  • Salt & pepper to season
  • For the vegetarian gravy: 1 tbsp vegetable oil, 1 small onion, diced, ½ cup stock, 2 tbsp soy sauce, 1 - 2 teaspoon any kind of flour (I used corn starch and tapioca to make the dish gluten-free), dissolved in a bit of cold water
  • Sun dried tomato, cut into small pieces
  • Parsley, chopped
  • Low fat cheese, grated (for vegans: use vegan cheese or just leave out)
  1. Cut the sweet potatoes into finger long sticks, mix them well with the oil, salt and pepper, until evenly coated
  2. Spread out on a baking tray and bake in the oven at 450°F for about 15 minutes (or until brown and slightly crispy - please note these French fries will never get as crispy as fried ones, but they are 100 times healthier!)
  3. In the meantime, make the gravy: heat the oil in a pan, add the onions and cook for about 1 minute, until fragrant, then add the stock and the soy sauce, cook for another 2 minutes, then add the water-flour mix until you reach the right consistency (tip: add rather less than too much, as the gravy can thicken really fast!)
  4. Assemble on a platter: first the sweet potato fries, then the gravy, then cheese, then the tomatoes and lastly top with some parsley
