Healthier Apple Crumble with Banana “Ice cream”

Hi my dear readers! I am finally back again, I am sorry that I was gone for a couple of weeks, but earlier this month, I went on my annual vacation to Switzerland to visit family and friends and I really was enjoying my time with them – and admittedly neglecting the blog a bit. And when I got back, well there were a lot of things to catch up with as well. As I also told you in my last blog post, I was also taking some time to think about layout changes I would like to do with the blog. And for that I have decided I will probably change to self-hosting in a couple of weeks from now as this just allows for so much more flexibility. So probably expect another small break for me until my next blog post, until everything is moved over, I would estimate sometimes mid July – just in time for my upcoming 1 year blog anniversary! Yep, it’s crazy how time flies! Almost 1 year since I started this little space to share the goodness of Superfoods :-) Anyways, I’ll be putting together a special post for the anniversary plus I hope to have the new layout ready by then! So stay tuned! 😉

Well, so much to updates and where I am at the moment, but now to the actual topic of this post: a heavenly yet delicious creation from the Superfoodista kitchen – a healthier Apple Crumble recipe :-)

Apple-Crumble-4

Dig in and enjoy! I will be bringing this over to Fiesta Friday now at my friend Angie’s blog the Novice Gardener! Oh, how I missed the creative and fun crowd over there! Can’t wait to see all the creations for this week! I have definitely missed a lot of yumminess the two Fiestas I didn’t attend!

Have a lovely weekend you all! hugs 😉

Healthier version of an Apple Crumble
Author:
Recipe type: Dessert
Cuisine: American
Serves: 2
Ingredients
  • 1 (organic) Apple, cut into thin slices
  • 4 tbsp coconut palm sugar, divided
  • 4 tbsp margarine or coconut oil
  • 8 tbsp rolled oats, of which 2 tbsp should be finely ground (use a food processor for that)
  • 2 teaspoons cinnamon, divided
  • 2 frozen bananas (tip that your blender blades will thank you for: cut into pieces before freezing!)
Instructions
  1. In a pan, heat up 2 tbsp of the margarine (or coconut oil), add the apple slices
  2. Add 2 tbsp coconut palm sugar and 1 teaspoon cinnamon, let simmer at lower heat for about 5 minutes until the apple pieces are soft
  3. In a bowl, mix the rest of the coconut palm sugar, the margarine, the cinnamon and the oats, form crumbles
  4. Put the cooked apple slices into a baking pan, then cover with the crumbles
  5. Put into the oven and bake at 400°F for about 25 minutes until the crumbles are nice and crunchy(like granola!)
  6. In the meantime, make the banana ice cream, which is basically, just putting the frozen banana pieces into a blender, maybe with a splash of milk of your choice, then scrape down from the size and form two ice cream scoops - so delicious, healthy and dairy free too!
  7. Take out the crumble from the oven, place the banana ice cream scoop on top, serve warm

    Hi Sylvia
    Yuuuummmmmy! I love apple crisp.
Just got back from Canada. I ate sweet potatoes there. Yummmmmy. I also had almond butter, even brought some back with me (amongst other things as well).
Hope you’re enjoying your summer. As for me, I’m freezing right now in our winter.
    :-)

Hi Staci! so nice to hear from and happy to know you had a good time back home with good food! 😉 Good thing you can bring food to Brazil!!
Oh, I would love to give you some of our heat! 😉 It’s been so hot and humid here lately, not pleasant… But well, not complaining as long as the sun is shining! 😉 Thanks for stopping by! hugs

    • Sylvia @superfoodista.com says

Thank you so much! And thanks for stopping by! Let me know if you get to try it and how it turns out! 😉

Hi Sylvia! Your blog layout is looking absolutely lovely, as does this healthier apple crumble. I just read about making banana “ice cream” in a book and was curious about the consistency. From your photos, I think the consistency is probably very good. Have fun co-hosting and I hope all is well! xx

    • Sylvia @superfoodista.com says

Hi Ngan, thank you so much! I am actually still working on the new layout, it’s still a bit messy in some areas, as it’s not adjusted to the new format yet, but I’m getting there 😉
Yes, the banana ice cream has a perfect consistency. When you blend it, it will look dry at first, but then just scrape down from the sides and form a scoop, it will really resemble a lot a “real ice cream”! 😉 Thanks for stopping by!

    • Sylvia @superfoodista.com says

Thanks so much dear Garima! 😉 It’s really super easy, you should give it a try! 😉

    • Sylvia @superfoodista.com says

Thank you so much Sarah!! Very nice to meet you through FF too!! Thanks for stopping by!

Hi Sylvia, I am sooo thrilled to make your acquaintance. I am grateful to Angie for making this possible by making you a co-host. I cannot tell yoiu how thrilled I am to see your blog. I am all about eating healthy and drench my family with the so-called “superfoods”. A year and a half ago I made a major change in my eating habits. I always ate healthy but now it is even more healthier with gluten-free and minimal to no processed foods. I am defintiely going to explore your blog. Love the healthy apple crumble. That will be my first recipe to try. Be prepared for tons of queries from me.

    • Sylvia @superfoodista.com says

Hi Suchitra, wow, thanks so much for the sweet and kind comment! So happy you liked my recipes! Yes, absolutely, feel free to ask anything any time you like. And hopefully I will be able to help you! Eating less processed foods is definitely a great choice you have done for you and your family!! thanks for stopping by! Sylvia

Welcome back Sylvia! I hope you had greta time visiting family and friends…. I know well that sensation! I love crumble, but I’ve never thought to make it with oat… that’s very intriguing and I bet very crunchy! I’ll stay tuned for the blog-anniversay post! Have a great Sunday!

    • Sylvia @superfoodista.com says

Thank you so much dear Margherita – yes, it is always such a nice time to be back – but always too short too, don’t you think? I feel I never have enough time to meet everyone or spend enough time, but well, it’s better than nothing 😉 We are lucky to live in modern times, so it’s easy to keep in touch even over distance.
Yes, the oats were super crunchy, probably much more crunchy than a “normal” crumble, actually very similar to granola 😉 Thanks again for stopping by & hugs

  5. afracooking says

Welcome back!!! Hope you had a great trip! This recipe looks like heaven! You know I never thought of whizzing up my frozen banana into ice cream – must give it a try! (I dont like my banana too dark so I always have some slices in the freezer for the next pancake)

    • Sylvia @superfoodista.com says

Dear Afra, hahha, yes, I do exactly the same! I don’t like over ripe bananas – except for baking. So I usually chop them up in slices and store them in the freezer. I read about the idea to make ice cream with them on instagram and thought, how genius! The slices are also great for smoothies. Never thought of pancakes – great idea too! Yum, banana pancakes are great! hugs & thanks for stopping by dear!

    • Sylvia @superfoodista.com says

Thank you so much dear! Yes, I love this skillet too, I got it as a gift from the food blogger conference I attended a few weeks back. I really love apple crumble too, this one was super crunchy because of the oats I think – almost like granola 😉 hugs & thanks for stopping by!

  6. chefjulianna says

Welcome back to FF, Sylvia! This is such a lovely, healthy re-make of the apple crisp I ate almost every Sunday as a kid. I love your recipe for the banana ice-cream. Good luck with the move to your new blog! 😀

    • Sylvia @superfoodista.com says

Thank you so much dear Julianna! Oh, it’s so great to be back at FF – how I missed it! It’s such a great event every week just full of creativity and yumminess! 😉 Thanks a lot, I will need the lucky wishes for the move! hugs

  7. apsara says

Yum, yum, that is so inviting! The banana adds a great touch. Good to hear that you are making updates, look forward to seeing your self-hosted version of the blog. :)

    • Sylvia @superfoodista.com says

Thank you so much dear! 😉 Yes, I am going to be busy with this move I think, I don’t know too much about all the technical aspects, so just hope everything is going to go well! hugs & thanks for stopping by!

  8. Fae's Twist & Tango says

Welcome back, Sylvia! Congratulations on your plan for taking the next step in your blogging. You started a makes-sense, classy blog and I know you will be successful in your new endeavor. Another yummy treat that one does not feel guilty to eat. :)

    • Sylvia @superfoodista.com says

Dear Fae, thank you so much for your kind words, really means a lot to me! 😉 I am a bit nervous about the move as I am not super technical, but it’s something I have been considering for a while and I just got to do it. I hope all will go well! So nice to have you back too after the long trip and thanks for stopping by! hugs

  9. Butter, Basil and Breadcrumbs says

Welcome to Fiesta Friday, Sylvia!! Oh wow… what a gorgeous apple crumble and banana ice cream that you’ve brought to the table!! It looks so delicious..and so healthy. I love that! I’m interested to know how/what/where you’ll be switching your blog to. I’ve been giving it some thought too, and think it’s time. Just like you..in time for my one year blogiversary. Thank you so much for sharing this lovely recipe with all of us! Wonderful post, and I wish you all the best in your move! <3

    • Sylvia @superfoodista.com says

Thank you so much dear Prudy! 😉 Well, I am doing some investigation right now for the move, but I was recommended to use hostgator.com, they are a good platform. And I am now also looking into a suitable theme for a food blog. My friend Tammi from gmofreegirl recommended “Foodie” to me and I really like it. I will definitely let you know how it goes and you can reach out to me anytime with questions! hugs

  10. CakePants says

This looks delicious! I can almost smell the caramelized apples…yum :) Good luck switching over to self-hosting and what not (I’ve been contemplating the move as well, but I gotta finish my real-life apartment move first!)!

    • Sylvia @superfoodista.com says

Thank you so much dear! 😉 Yeah, and the cinnamon smells really so good too! Yummy! I am honestly a bit nervous about the move to self hosting, as I am not thaaat super techy – will let you know how it goes! Thanks for stopping by!

  11. annainternational says

Wow! Got to make this too! Apple crumble is my favourite but this healthier version looks even better! In fact, I brought a rhubarb and ginger crumble cake to the party – I am thinking it needs adapting to your healthier crumble topping! :-) Thanks for the inspiration!

  12. Stacey Bender says

Love the “banana icecream”. The big question is did you start an Instagram account (from your convention advise)? Good luck switching to self- host. I might need to pick your brain when you finish.

    • Sylvia @superfoodista.com says

Thank you so much dear Stacey! 😉 Yes, good memory you have! I wanted to ramp up my engagement on Pinterest, I have honestly not gotten much further with that – terrible slacker I am 😉 But as soon as I got the self hosting project done, I’ll get to that! I already have an instagram account, but I feel the audience on instagram is very focused on instagram and there is very limited traffic to the blog from there. Pinterest is definitely better – in case you are thinking of which one to invest in besides you blog. Oh yes, nervous about the move to self hosting, you can definitely reach out to me anytime! I am doing a lot of reading an pre-work now 😉

  13. Hilda says

Good to hear from you again and look forward to your ‘new’ blog. This crumble looks so easy and delicious. Love the idea for the ice cream.

    • Sylvia @superfoodista.com says

Thanks so much dear Hilda!! Thanks so much for your sweet welcome back! 😉 Yes, the ice cream is so easy to make and delicious! I saw the idea on instagram and just had to try it – super genius! 😉 Thanks for stopping by dear!
