Weekend TV snack platter: Beetroot humus and Sweet Potato chips

Yay, it’s Friday again. I am a Friday lover, definitely….What my fiancΓ© and me love to do during (at least!) one of the weekend nights, is to watch a movie at home. About 2 years ago, a friend gave us an Apple TV device – and since then, we simply love it! Do you have an Apple TV too? πŸ˜‰

Anyways, I was thinking about some healthy snack alternatives for movie nights and I came across several beetroot humus recipes lately that I was dying to try it out. So glad I did – it’s really super fantastic! I was almost cleaning up the the blender with my tongue….soooo good! And the color – well, isn’t it just simply stunning?? I love how beetroot gives color to food, it’s really intense.


This healthy and colorful snack platter contains following Superfoods:

  • Sweet potatoes
  • Garlic
  • Carrots


  • 2 beetroots
  • 2 Tbsp tahini sesame seed paste
  • 1 lime, fresh squeezed juice (or 1/2 lemon)
  • 1/2 Β small clove garlic, chopped (if you want a Β less “garlicky” taste, add less garlic, I find the garlic taste is really intense with this preparation method)
  • 1/2 – 1 tbsp ground cumin
  • 1 generous pinch of sea salt
  • Fresh ground pepper to taste
  • For the potato chips: 1 sweet potato, very finely sliced, 2 tbsp canola oil, cayenne pepper, salt


  • Place all ingredients for the humus in a food processor (or blender) and pulse until smooth, taste and adjust seasonings and ingredients as desired
  • Pre-heat the oven to 400Β° F, cut the washed and peeled sweet potato into very thin slices (if they are not thin enough, they won’t get crispy, but rather soggy)
  • Put the potato slices into a tupperware, add the oil and seasoning, close tupperware, shake vigorously a few times to mix the potato slices with the oil and seasoning
  • Spread the marinated slices on a baking tray and bake in the oven for about 15 – 20 minutes, until crispy
  • Serve the humus with steamed or fresh carrots, cucumber sticks and the sweet potatoes chips fresh from the oven
  • For left-over humus, you can chill and store it in the refrigerator for up to 3 days or freeze for longer storage

Oh, and yes, another tip concerning the left-over humus, you can also use it to decorate some healthy crackers. I spread them for example on some gluten-free crackers I bought at Wholefoods and decorated them with a sprig of parsley. Cute and delicious! πŸ˜‰

      Thank you so much for stopping by! :-) I cooked the beets first in some water. You could also roast them in the oven first, but should definitely be cooked, I find the consistency becomes “creamier” this way. I hope to get to try it, it’s definitely a nice alternative to the traditional hummus using chickpeas. hugs, Sylvia

      Thank you so much! I know, the beetroot is just so amazing, right? It’s of such an intense color! Sometimes I mix it with other food, to give it color,e.g. smoothies – it’s incredible how little you need of it…..I love it! πŸ˜‰ Thanks a lot for stopping by πŸ˜‰

    This feels like a really silly question, but this is roasted or cooked beet root, right? I have added beetroot to a traditonal hummus, but I never thought of only using beetroot – great idea!
