Greek Beet Salad with Baked Falafel

Hello again, I hope you all had a great New Years celebration? I am sure it was filled with great moments and lots of delicious food and drinks! 😉 I am almost back to Miami, just a few more days with family back in Switzerland, basically half-way back from Bangkok to the US :-)

My recipe today, reminds me of a vacation in a hot place, by the ocean….. The inspiration is a mix from the Middle-East and Greece – and from a recent restaurant visit. I went to the Cheesecake Factory with my friend Molly a few weeks back and ordered a salad that was called “Greek Faro salad” on the menu. It was delicious indeed – it was basically a Greek salad, but with some beets (I LOVE beets, especially now during the winter season) and it also contained some farro, which is a type of grain. Unfortunately, I could not find any farro in the supermarket (yet), so I decided to add falafel to this salad instead, as I thought it would fit and make it a satisfying meal as well. I also did not fry the falafel (traditional preparation method), but baked them instead to make them healthier.

This dish contains following Superfoods:

  • Tomato
  • Garlic
  • Olive oil

Ingredients

For the falafel:

  • 1 cup dried chick peas – soaked overnight and drained (they will expand to more than 1 cup!)
  • 1 onion
  • 2 tbsp chopped parsley
  • 2 tbsp chopped cilantro
  • 1 teaspoon salt
  • 1/2 – 1 teaspoon hot pepper
  • 2 – 4 garlic cloves
  • 1 teaspoon cumin (optional in my view)
  • 1 teaspoon coriander (optional in my view)
  • 1 teaspoon baking powder
  • 1 tbsp lemon
  • 1 tbsp olive oil
  • 4 – 6 tbsp flour of your choice (I used gluten-free all-purpose flour)

Falafel-Dough Greek-Salad

For the salad

  • 1 – 2 beets
  • 1/4 cucumber
  • 1 – 2 tomatoes
  • 1/2 cup feta cheese
  • 1 onion
  • 1/4 bell pepper (any color)
  • Dressing: 2 tbsp olive oil, 2 tbsp fresh lemon juice, salt and pepper

Preparation

  • Pre-heat the oven to 375°F (= 190° C)
  • Blend the chickpeas in a blender until you get a smooth texture
  • Add the onion, parsley, cilantro, salt, hot pepper, garlic, cumin and coriander and blend more
  • Put into a bowl, now add the baking powder, olive oil, lemon juice and flour, mix carefully
  • With your hands, form little balls and place them on a baking tray, pre-lined with parchment paper
  • Put into the oven, bake on each side about 15 minutes, until both sides are nicely browned
  • While the falafel are baking, prepare the salad by cutting the beets, tomato, cucumber, bell pepper and onions
  • Mix the salad with some olive oil, lemon juice, salt and pepper to taste
  • Arrange the salad on a plate, add the falafel and sprinkle the feta cheese on top!

      Hi Sophie, I actually had the same thought when I ate them that they would be nice with a dip…Are you strict vegan? If not, I would definitely recommend a greek yogurt dip (mix low fat greek yogurt, lime juice, salt and pepper and add some fresh mint leaves) – yummy yum! 😉 If a vegan option, I could imagine, a mix of tahini, mashed avocado could be nice, or a fresh tomato-cilantro (finely cut tomatoes, onions, cilantro, a bit of olive oil, lime juice) salsa? Hmm…getting creative here 😉 Let me know if any of these work for you and if you try them with the falafel. hugs, Sylvia
