Mini Spinach-Ricotta Cannelloni

Cannelloni are one of my favorite Italian meals, especially when they are filled with a delicious spinach-ricotta filling. I just love the combination of taste and bite these two have together!

As I have discovered Wonton wraps as a great and easy base to make my own, clean, home-made filled pasta (I have made pumpkin ravioli with them previously), I thought they would also perfectly work for cannelloni. However, as these wraps are really mini, I opted for mini cannelloni in this case. And they came out really cute – perfect for a fancy appetizer – or if you make enough, they are also sufficiently filling for a main course (I had both of the portions in the pictures for lunch…hehhee… 😉 )

This dish contains following Superfoods:

  • Spinach
  • Tomato
  • Garlic

Ingredients (for 2 small appetizer portions or 1 entree portion)

  • 1/2 pack of fresh Baby Spinach
  • 1/2 cup Ricotta
  • 2 Tomatoes
  • 2 – 4 Garlic cloves
  • 1 Onion
  • Olive oil for sautéing
  • Wonton wraps (as many as you need)
  • Parmesan cheese for topping


  • For the spinach-ricotta filling: Just mix the ricotta with a the sautéed spinach (sauté them with some olive oil and garlic), season with salt and pepper
  • For the tomato sauce topping: cook some tomatoes with basil, garlic and onions, season with salt and pepper, put aside
  • Now take the wonton wraps and put about 1 tbsp of filling on them, roll them up to a cannelloni/ cigar type of shape
  • Place them into a pre-greased dish that is “oven-stable”
  • Pour the tomato sauce over them
  • Sprinkle some parmesan cheese over the dish
  • Bake in the pre-heated oven for about 10 minutes at 400°F
  • Serve and enjoy! 😉
