Stuffed Squash with Shrimps (Camarão na Moranga)

The background and inspiration of this dish came from my sister-in-law. I posted a picture of my recently-bought acorn squash on instagram and asked what type of dishes people love to prepare with acorn squash. There were many great ideas, but I loved hers a lot! She told me that in Brazil they use it to cook a dish called “camarão na moranga”, which means literally translated “shrimps in a squash”. I thought, what a brilliant idea, because I cook with Superfoods, inspired by the world’s cuisines. And since part of my family is from Brazil, it really was time for a Brazilian dish again :-)

The original recipe is quite fatty (lots of heavy cream and full fat cheese), so  my mission was also to make it a bit healthier, e.g. replace the heavy cream and cream cheese with healthier alternatives. I googled some recipes on the web and I found this great video on a Brazilian recipe website that shows how to make it. The video is in Portuguese (and luckily I understood most of it), but honestly, it’s really quite self-explanatory too, if you don’t. I followed the principle of the preparation, but I changed some of the ingredients, because as I mentioned, I wanted to make it healthier.

This dish contains following 5 Superfoods:

  • Pumpkin (the acorn squash)
  • Greek yogurt
  • Tomato
  • Olive oil
  • Brown Rice

Ingredients: (for 2 portions)

  • 1 small to medium sized acorn squash (or any other edible pumpkin type)
  • 2 tbsp olive oil
  • 1 onion, cut into small dices
  • 1 tomato, cut into small dices, remove the parts with the seeds
  • 1/2 red bell pepper, cut into small cubes
  • 8 – 10  shrimps (for vegetarian and vegan version: leave out and just add some more of the cooked squash back into the sauce)
  • 1/2 can coconut milk (about 7 oz)
  • 2 tbsp greek yogurt (for vegan version: leave it out and add a bit more coconut milk)
  • 1/2 handful of cilantro (for the sauce) and a bit more to decorate
  • 1/2 tbsp curry powder
  • Salt & pepper to taste
  • Brown rice – to be served on the side

Preparation

  • Cut off the top of the squash, scoop out the content as much as you can – as it was really hard for me (the squash was very hard), I boiled the squash first in a big pot of hot water for about 20 minutes, after that it was much easier to remove the flesh and seeds – in total, I cooked the squash for about 30 minutes
  • If you have a really big squash, you can also bake it in the oven until it is soft
  • The squash is ready when you can easily stick a fork into it – remove the flesh inside, until you have some sort of “bowl” – we will use about 1/4 of the flesh to add back to the “filling” (for vegetarian and vegan add about 1/2 back)
  • In a pan, heat the olive oil, add the onions, cook until the aroma comes out, add the diced tomatoes and bell pepper, after 1 minute, add the shrimps and the cooked squash
  • Cook until shrimps are just a bit cooked – don’t cook them too much, because then they become “rubbery” and not good
  • Add the coconut milk and greek yogurt, stir to mix everything
  • Season with salt, pepper and curry powder, add the cilantro
  • Put the squash on a plate, fill it with the filling, decorate with some additional cilantro
  • Serve with brown rice – enjoy!

This is dish was really heavenly and it was way less fatty than the original recipe. When the filling is gone, you can scoop out the squash further and eat its soft, cooked flesh – so amazing!!!

      Yes the camarão na moranga was really nice, I never made it before, so it was an experiment, but it turned out well 😉
