Lentils bowl with sweet potato and kale

A lentils bowl is always my quick-fix, my to-go save-me recipe when I have absolutely nothing exciting in pantry nor fridge. The awesome thing about this dish is that you can make tons of combinations and you can basically throw into it whatever you have in your kitchen. The only ingredients that you will always need is lentils, garlic, onion and some oil. And by combining all the not-so-exciting ingredients you can create a very exciting dish after all! 😉

The recipe I made for lunch the other day contains following 4 Superfoods:

  • Lentils
  • Garlic
  • Kale
  • Sweet Potatoes

Ingredients

  • 2 tbsp olive oil
  • 1 cup red lentils (I like to use them, because they cook fast compared to other types)
  • 2 cloves garlic
  • 1 small onion
  • 1 cup stock
  • Sweet potato, cut into small cubes
  • Kale, cut into small stripes
  • Salt and pepper to taste

Preparation

  • Sauté the oil in a pot, add garlic and onions until the smell comes out, add red lentils and sauté for a bit more
  • Now add the liquid and let simmer
  • After about 5 minutes add the sweet potato cubes, let simmer more, add liquid if needed
  • Shortly before everything is softly cooked, add the Kale, so it can just cook for a few minutes
  • Season with more salt and pepper if needed
  • Serve in a bowl, top with some additional fresh Kale if you like

As I mentioned above, this is just a variation. What really works well as ingredients are for example:

  • Pumpkin cubes
  • Cherry tomatoes
  • Potato cubes
  • Peas
  • Broccoli
  • Cauliflower

It’s also great to add some curry to the bowl, gives it some exotic kick.

    Love love love lentils! I love how you added sweet potatoes to it too. I bet it adds some sweetness, and gives it a creamy texture. Adding the kale also, well that just makes it super good! Thanks for the recipe :)
