Sweet Potato “Fries” with Basil-Yogurt Dip

As I made a Sweet Potato Puree a few days back with the same ingredients (Sweet potatoes & Rosemary: because both are immunity boosting!) I thought that they would also be super nice together as a french fries version. As these are baked with healthy olive oil and not fried, they will be less crispy, but nevertheless delicious – and definitely healthier!! :-)

This dish (“fries” and dip) contains following Superfoods:

  • Sweet potatoes
  • Olive oil
  • Greek yogurt

Ingredients (for 2 – 4 portions, either as main or side dish)

  • 2 Sweet potatoes
  • 4 – 5 tbsp olive oil
  • Salt and pepper to taste
  • Paprika, Cayenne pepper or chili flakes – to season – depending on how spicy you want the fries!
  • Rosemary, about 2 stalks, just the “leaves”
  • 1 cup Greek yogurt
  • A handful of fresh, chopped Basil leaves

  • Cut the sweet potatoes into long sticks, put them into a re-closeable container (e.g. big tupper ware)
  • Season them with olive oil, salt, pepper and your choice of paprika/ cayenne pepper/ chili flakes, add rosemary too
  • Now close the container and shake all ingredients well, until sweet potato sticks are covered with the oil and seasoning
  • Bake in the oven at about 375Β° F (190Β° C) for about 30 minutes – fries will get nicely brownish and soft
  • Take the fries out of the oven, sprinkle with some more salt if needed
  • Prepare the dip by mixing yogurt and fresh Basil leaves, season with some salt and pepper
  • Serve fries and dip together on a plate – or for guests, you can also put the fries into a small, decorative cup
