Avocado-Tomato salad with Miso dressing (vegan)

Hi there dear friends πŸ˜‰ I hope you are having a great week so far! Today, I want to tell you about an amazing discovery I made last week. I had lunch with a friend, and she ordered a salad that came with a miso vinaigrette. Very intrigued, I of course had to try her salad, and I simply loved the vinaigrette! When I arrived at home, I just realized I had a small opened jar of miso paste in my fridge that I had used a few days earlier to make soup. And conveniently, there was a recipe for a miso salad dressing on the cover of the jar. So I tried to make a salad with it the same night. I chose two of my favorite Superfoods to go with it, tomato and avocado, because I thought they also would really go well together with the miso.Β The miso paste I used was made ofΒ soy beans (there are several types of miso pastes)Β so it’s veganΒ (right?) and it is also low in cholesterol, low fat and contains no gluten! This recipe is a must-try for those that love a healthy but still tasty dish. The dressing tastes heavenly creamy – and all that without adding mayonnaise!

This salad contains following amazing Superfoods:

  • Avocado
  • Tomatoes

Miso-salad-ingredients

Ingredients:

For the dressing (makes 1 cup of heavenly, creamy dressing!)

  • 4 1/2 tbsp miso paste
  • 4 1/2 tbsp honey (or you can also use agave nectar, but then a bit less, as it is sweeter than honey, maybe about 3 1/2 tbsp)
  • 3 tbsp rice vinegar or wine vinegar
  • 3 tbsp mustard

Miso-vinaigrette

For the salad

  • 2 – 3 tomatoes
  • 1 avocado
  • Green onions (scallions), finely cut
  • Pomegranate (for decoration mainly)

Preparation

  • Cut the ingredients into small cubes, the green onion into thin dices/ slices
  • Prepared the dressing
  • Mix everything well (keep some of the green onion dices to sprinkle over the salad), carefully place the salad on a plate, sprinkle the rest of the green onions and the pomegranate over the salad
