Easy, healthy Pasta Dish

This is not a combination I came up with, I tried this dish the first time when a friend cooked for me. And she said – this was her quote – Β “I am not a very good cook”. But the dish actually tasted heavenly – so guess, this just proves that this recipe is really, really super easy! :-) So you should definitely try it.

This dish contains the following 4 Superfoods

  • Brown Rice (from the pasta)
  • Tomatoes
  • Garlic
  • Turkey (just leave it out if you are vegetarian, the garlic and all other ingredients give enough taste to this dish)

Ingredients

  • Brown Rice Spaghetti (I found them in the Supermarket, but I think you can definitely find them in a healthy specialty store – I find them healthier than the usual wheat spaghetti)
  • Cherry tomatoes
  • Italian parsley (those with the bigger leaves)
  • 4 – 6 garlic cloves
  • Some turkey cut in small pieces (leave out if you are vegetarian)
  • Olive oil
  • Salt and pepper to taste

Preparation

  • Boil the brown rice spaghetti in slightly salted water until they are almost al-dente, it’s very important they are not too much cooked, as otherwise they will become all “mushy” when you mix them with the other ingredients and cook them a bit more
  • In a saute pan, heat the olive oil and when hot, add the garlic, cut in thin slices, fry until the flavor comes out, but they didn’t turn brown yet
  • Now add the cooked pasta, tomatoes and finely chopped parsley, mix well
  • Add salt and pepper to taste
  • If you eat dairy, you can also add some fresh mozzarella cubes as a topping before serving
