Pumpkin Ravioli

So in this recipe, I’ll show you a super easy way how to make your own Ravioli, but without spending hours in the kitchen. I made a few attempts previously to make my own pasta dough, but it just was super time consuming and in the end, my dough was too thick and the raviolis didn’t turn out that amazing. I read somewhere that it would be possible to use Wonton wraps to make ravioli, so I bought them in the supermarket and made the test – and they turned out really well!

The great thing about this way of making pasta that you can add any filling your like! It’s up to your preference and to what you love – for me it has to be some type of Superfood of course πŸ˜‰ So I chose pumpkin, because I also just really love its taste.

This Ravioli dish contains following Superfoods:

  • Pumpkin
  • Tomatoes

Ingredients:

  • Wonton wraps – you should be able to find them in your supermarket, or otherwise in an Asian store
  • Pumpkin
  • 1 onion (will be used for filling and the “sauce”)
  • 1 -2 tbsp Olive oil
  • 2 tbsp coconut milk
  • Salt and pepper to taste
  • 1 tbsp margarine
  • Cherry tomatoes
  • Parsley

Preparation

  • Cook the pumpkin, until soft, then mash
  • In a pan, heat the olive oil and fry the onion, until the flavor comes out, mix with the mashed pumpkin, season with some salt and pepper, add the coconut milk – this will be your filling
  • Now make the raviolis: place some filling in the middle, then fold over to et a triangle, fold over at the ends
  • Cook the ravioli very quickly in some hot, salted water, 1 – 2 minutes, until they float at the surface – the dough will become slightly “wrinkley”
  • Prepare the “sauce” in a pan, heat some margarine (or butter), add some onion, sautΓ©, add the cherry tomatoes and parsley
  • Carefully place the ravioli on a plate, put some sauce over them
  • Enjoy!!
