Coconut Noodles

I made these noodles, because I had some coconut milk left over from another dish I made a few days earlier. And as one shouldn’t keep coconut milk too long opened, I decided to use it for this easy, but exotic and surprising dish. This also really fits the way I cook – throwing things together that I can find in my fridge and pantry – of course always using at least one Superfood :-)

This dish contains even 3 Superfoods:

  • Coconut
  • Brown Rice
  • Turkey (if you are vegetarian or vegan, you can also replace this with tofu)

I have actually started to eat less meat recently, but I make exceptions for chicken and turkey, as they contain healthy proteins and are low in fat.

Ingredients

  • Brown Rice Noodles (I prefer to use these over white rice noodles, as they are just healthier)
  • 2oz – 4oz coconut milk
  • Cilantro
  • Green onions, finely cut
  • Turkey (or another protein you would like to combine with the noodles)
  • Red curry paste
  • Salt and pepper to season

Preparation

  • Cover the turkey (or protein of choice) with the red curry paste, season with salt and pepper, let marinate for a bit
  • Cook the rice noodles until al-dente
  • Cut the cilantro and green onions into small pieces, add to the cooked noodles, together with the coconut milk
  • Mix well and season with salt and pepper to taste, put aside
  • Now fry the turkey in the pan, until well-done
  • Serve together on a plate, use a lime wedge to decorate (uuups forgot it here, as I was so hungry and wanted to get the pictures done so I could devour this amazing plate!! It was delicious indeed :-) )
