Pesto salad with Kale

Close to my office, which is in Coral Gables, there is this salad place, called Giardino Gourmet Salads. I love to go there, because they make your customized salad freshly for you. And you can also choose from a wide range of their menu, where they already suggest some delicious combinations. One of my favorites from that menu is the salad called “Caprese in the mix”. I customize it a little bit and in my version it comes with romaine lettuce, fresh tomatoes, sun-dried tomatoes, black olives and mozzarella. But the best about this salad is actually the dressing, it is a pesto vinaigrette – amazing!! It gives the salad such a nice, italian flavor. I made this salad several times at home, but today, I wanted to make it even more Superfood style and I replaced the romaine lettuce with kale. Kale is definitely much healthier than romaine lettuce, because it makes you full for much longer (good for dieting!), it comes with much more fibers and a lot of nutrients. But now back to this tasty salad which contains following 3 Superfoods:

  • Kale
  • Tomatoes
  • Olive oil

Ingredients

  • Kale, washed and cut
  • Cherry tomatoes
  • 1/4 cup sun-dried tomatoes
  • 1/8 cup black olives, cut into rings
  • 1/2 big mozzarella or 1 whole smaller one
  • 2 tbsp Olive oil
  • 2tbsp balsamic vinegar
  • 1 – 2 tbsp Italian Herb paste (please see image below of the product I used, but you can use any brand that provides a similar taste – or you can even use fresh herbs if available)

Preparation

  • Cut all ingredients into small pieces/ cubes
  • Prepare the dressing, by mixing the olive oil, balsamic vinegar, the herb paste, salt and pepper
  • Add all ingredients to the dressing and mix well
  • Enjoy!
