Layered Quinoa Cup

Now this is a recipe that looks quite cool, but is in the same time so easy to make! And it’s super good for you too, low fat, full of fiber, great fats and protein. In fact, the entire cup is only made up with Superfood ingredients! This dish contains following 5 Superfoods:

  • Quinoa
  • Avocado
  • Pumpkin
  • Tomato
  • Greek Yogurt



  • Cooked Quinoa
  • 1/2 Avocado, mashed and seasoned with some lime juice, salt and pepper
  • Pumpkin, cooked softly and mashed, seasoned with some salt and pepper
  • 6 tbsp Greek yoghurt
  • A few cherry tomatoes, cut in small pieces





  • Fill the cup with the ingredients, layer by layer – mix and layer as you like
  • If needed, season with some additional salt and pepper between the layers

This can be prepared as a healthy lunch, dinner or also for guests in a smaller version and as appetizer
