As today is officially the best day for Breakfast (Sunday that is), I was going to dedicate today’s post to my favorite meal of the day! I honestly can’t get out of the house without a proper breakfast. During the week, there is usually not much time for it, as I need to rush out, hit the insane Miami traffic (not in terms of amount of traffic, but amount of crazy drivers! ) – but I still always take time for breakfast. But how good that today is Sunday, and we got plenty of time for it.
What I love to make for breakfast – and for this I even take time during the week – are colorful, flavorful breakfast bowls, into which I pack as many Superfoods as possible!! Mainly berries, I love berries, and they are just so amazing for you, berries are among the most anti-oxidant rich fresh fruits and vegetables. Antioxidants help fight off age-related diseases. So it’s definitely great to add them to your daily diet.
Here some examples what you can do just with some yogurt and fruits, maybe some granola, chia seeds and oats. There is no limit to your creativity! All the pictures below have been posted to my instagram account – in case you would like to follow me there for daily updates
Blueberry Parfait (with Greek Yogurt, home-made granola and fresh Blueberries)
Strawberry cup (Greek yogurt, home-made granola and fresh strawberries – strawberries are really rich in vitamin C too!)
Chia & overnight oats with banana (Chia & oats soaked over night in almond milk, mixed with some mashed banana in the morning and some strawberries cubes layered in, topped with some fresh bananas and goji berries)
Superfruit & Chia bowl (Greek yogurt, mango, raspberries and blueberries, granola, chia seeds sprinkled over everything)
Fruit & Mint bowl (Greek yogurt, granola, mango, raspberries & topped with fresh mint leaves – a surprising combination!)
Ultimate berry bowl (can’t get antioxidant richer than that and for real berry lovers like me; Greek yogurt, raspberries, blueberries, strawberries and home-made granola – amazing!!)
In case you want to make your own home-made granola for the Breakfast bowls, here my recipe.
And here is a more detailed recipe for the Fruit & Mint bowl. I actually got the inspiration for this from my trip in Peru. I had this amazing yoghurt & granola bowl with fruits at Cicciolina restaurant in Cusco. Here the link to my earlier post about the trip to Peru.
This amazing, colorful and flavorful breakfast bowl contains following Superfoods:
- Greek Yoghurt
- Oats (from the granola)
- Greek yogurt
- Mango, ripe, cut into small cubes
- Fresh, washed raspberries
- Mint leaves, cut into fine pieces
- Granola, home-made or store-bought
