Lentils Curry

I thought about this recipe, as I found a pack of red lentils I had bought a few weeks back at the Supermarket. It’s been ages since I cooked lentils, but they are actually, just really so good for you, with their high fiber and protein content. In fact, 1 cup of cooked lentils, contain 62.5% of the daily recommended value for fiber. I also happened to have some yummy vegetables in the fridge, so the idea was born! :-) This dish is packed with amazing fibers from both the lentils and the pumpkin, and it contains also broccoli, tomatoes and garlic as additional Superfoods.

This recipe contains following 5 Superfoods:

  • Pumpkin
  • Broccoli
  • Tomatoes
  • Garlic
  • Olive oil

Lentils-curry-ingredientsIngredients: (for 1 big portion, as main course for 1 person or appetizer/ side dish for 2)

  • 2 tbsp olive oil
  • 2 cloves Garlic
  • 1 onion
  • 2 teaspoons red curry paste
  • 1 cup red lentils
  • 1 cup stock
  • Pumpkin, cut into small cubes
  • Broccoli, fresh or frozen, just the fleurets
  • Cherry tomatoes
  • 1/2 cup coconut milk
  • Cilantro


  • Wash the lentils thoroughly and set aside
  • Heat the olive oil in a pan, add the onions and garlic and sauté, add the lentils and sauté everything for about 1 minute, stirring continously
  • Add the curry paste, sauté a bit more
  • Now add the liquid and let the lentils cook for about 10 – 15 minutes, until they are almost done
  • Add the pumpkin cubes, broccoli, cherry tomatoes, simmer and cook for another 5 minutes until the vegetables are well done and soft
  • Add the coconut milk and cilantro, carefully mix all ingredients, season with salt and pepper to taste
  • Serve as it is or with a little bit of Naan bread (Indian bread) on the side

      Yes, the wood is a table! Unfortunately, it doesn’t belong to my, but to the apartment I am renting right now. So I am planning to buy a similar wood board or table, I hope to find it! :-) Thanks for stopping by!
