Blueberry-Flax Scone

Yumm…another Blueberry recipe. I told you, there are one of my favorite Superfoods! πŸ˜‰ And they are even more delicious in baked goods!

These scones are the American type of scones, in triangular shape. English scones are rather round. Nevertheless, I added some ground flax seeds to the original recipe from Martha Stewart’s site, to boost these scones with some Superfood content! πŸ˜‰

These scones contain following 2 Superfoods:

  • Flax seeds
  • Blueberries

Ingredients: (makes 4 scones – just multiply if you want to make more)

  • 1 cup of flour and flax seed mix (suggestion: 3/4 cup all-purpose flour, 1/4 cup ground flax seeds, but you can also add less flax seed, if you want it less “fibery”)
  • 1/2 tbsp baking powder
  • A pinch of salt
  • 2 oz of cold butter, cut in tiny cubes
  • 1 tbsp agave nectar
  • 1 tbsp of grated lemon peel (lemon zest)
  • 1/2 cup buttermilk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberries


  • Put flour, flax seeds, baking powder and salt into a bowl
  • Add the mini butter cubes (I would recommend to make them actually smaller than in my pictures)
  • In another bowl, beat the egg and add the buttermilk, agave nectar, lemon peel and vanilla extract, mix well
  • Then add the liquid to the dry mix, add the blueberries
  • Carefully kneed on a well floured surface, if the mix is too liquid and sticks too much, add a little bit of flour, but it seems to be quite a sticky affair, so don’t worry, it’s important to put enough flour on your hands to manage the dough
  • Form the dough into a rectangle, about 1 in thick, 3 in x 6 in in size (= 8 cm x 16 cm ) and cut in half, then cut halves again in two triangles
  • Place triangles on a baking pan
  • Bake in the oven at 375F (= 190 C) for about 20 minutes

  • Cool the scones on a cooling rack
  • Scones should be eaten when they are still warm and the crust is crunchy
  • If they are not eaten right away, you can freeze them and then quickly put them in the oven before serving
  • Scones taste great with some butter or margarine or clotted cream
