Thai Shrimp Salad

Thai salads are just so tasty and perfect for these hot summer days that we are now experiencing here in Miami, but also in most parts of Europe. In Thailand, you can have them with beef, shrimp, seafood, and they also come with glass noodles and are just wonderfully flavored with lime, fish sauce and other lovely fresh herbs. However, if you eat a “real” Thai salad, they are also very spicy. And despite being half Thai, I just can’t eat spicy food! Therefore, this version is a westernized and also simplified one, which makes it just really easy to prepare.

This dish contains following 2 Superfoods:

  • Tomatoes
  • Brown Rice

Ingredients:

  • Shrimps, already cooked
  • Cucumber, cut in thin half-dices
  • Tomatoes, cut in dices
  • Spring onion, cut in small dices
  • 1 -2 Limes, depending on their size
  • Soy sauce
  • Agave syrup
  • Stock (can be vegetable or chicken)
  • Pepper

  • Put the cucumber, tomatoes, spring onions and shrimps into a bowl, squeeze the limes and pour the juice over the vegetables and shrimps
  • Then prepare the rest of the dressing by heating up some water in a pan, then adding the stock
  • You can either use liquid stock, a paste (like me) or even the dry cubes from Knorr – they all work and make a nice tasting stock
  • Then add some soy sauce, agave syrup and pepper to taste – the sauce should have a strong taste, as it will be poured over the cucumber and tomatoes which carry a lot of water and will dissolve the taste a bit
  • I like to use stock as a base for the dressing instead of soy sauce and lime only, because it gives the whole dish a more balanced taste, I am also leaving out the fish sauce, as it has quite a strong taste and not everyone likes it
  • Another secret of Thai food is that it is usually sweetened (either with palm or raw sugar)  – I like to use agave syrup to give my dishes just the right taste; you don’t need much, maybe just 1 teaspoon, but it will beautifully balance the salty & sweet in your dish
  • Add the stock-soy-agave dressing to the bowl and mix everything well
  • If you like spicy food (unlike me), you can add now some dried or fresh chili to spice things up
  • Serve with some brown rice – enjoy as a refreshing lunch or dinner!
