Curry-Veggie Millet patties

I discovered this recipe while I was searching for dishes that contain millet. It’s from the blog “From Scratch Fast” by Nicki Sizemore – by the way, one of my favorite sites. Really easy recipes and wonderful photography. Check it out!

Well, so back to these patties, they contain 4 kind of Superfoods:

  • Millet
  • Carrots
  • Peas
  • Eggs

Ingredients:

  • 1 cup Millet
  • 1 medium sized carrot, grated into thin stripes
  • 1 tbsp Curry powder
  • 1 small bag of frozen peas (heaten up either in microwave or on stove)
  • 1 small can of sweet corn
  • Scallions, cut into fine wheels
  • Seasoning, like salt, pepper, etc.
  • 1 Egg

Preparation

  • Cook the millet with 1 teaspoon of salt, according to instructions on the bag, about 10 minutes before they are done, add the fresh carrot stripes, so they can cook together with the millet
  • Add the curry powder
  • Remove from the stove, add the peas, sweet corn and scallions
  • Season with salt, pepper and whatever spices you like until it tastes nice, add some more curry powder if you want a stronger curry taste
  • Lastly carefully add the raw egg, mix everything well

  • Now it’s time to form the patties, carefully place some in your hand and form small, flat patties
  • Put them on parchment paper to dry

  • You can put them into the fridge for about 1 hour to make them more stable
  • Then carefully heat some olive oil in a frying pan and fry the patties at medium heat until they are slightly god-brown
  • Serve with some salad and a sauce made of greek yoghurt, basil and salt

Greek yoghurt-Basil sauce

  • 1 Cup of Greek Yoghurt
  • Fresh Basil leaves, finely chopped
  • Salt & Pepper
  • Mix everything together, if the sauce is too thick, you can add milk or almond milk to make it more liquid
