This easy and fast to prepare recipe contains 6 kinds of Superfoods:
- Chia seeds
- Black beans
- 1 cup of Quinoa (uncooked)
- 2 tbsp Chia seeds
- 2 tbsp ground or whole flaxseeds
- 1 tomato
- 1/2 avocado
- 1 small can of sweet corn
- 1/2 a can of black beans
For the dressing:
- 1 tbsp of olive oil
- 1 tbsp of white balsamic vinegar
- coarse salt
Cook quinoa as indicated on the packaging.
Cut tomato, avocado in small cubes/ dices. Wash black beans to free them from the sauce they are coated with in the can.
Mix the dressing ingredients in a large bowl and then add all the ingredients.
Mix carefully and enjoy!
Tastes also fantastic as a side with grilled chicken or shrimps.
